The cheese is named after the city of Dublin, although it is made in County Cork. It combines the sharpness of mature cheddar, the nuttiness of Swiss cheese, and the bite of Parmesan. The cheese was developed by John Lucey and his secret recipe is exclusively held by the company Carbery.
