Brottrunk wird durch Milchsäuregärung aus einem Vollkornsauerteigbrot gewonnen. Durch die Milchsäuregärung handelt es sich um ein nichtalkoholisches und kohlensäurefreies Getränk. Prinzipiell ist die Herstellung von Getränken aus Brot jedoch schon sehr alt, darauf basiert zum Beispiel Kwas.
